Shrimp Stir-fry

How about an easy / delicious recipe that you can whip up in less than half an hour?  This is a shrimp stir-fry recipe from the “America’s Test Kitchen” show on PBS.

Shrimp Stir-fry Ingredients

MARINADE:
1 pound shrimp, peeled
1 tablespoon ground ginger
1/2 teaspoon salt
1 clove Garlic, sliced

SAUCE:
3 tablespoons sugar
3 tablespoons white vinegar
1 tablespoon catsup
1 tablespoon Sherry
1 tablespoons Siracha
2 t cornstarch
2 t toasted sesame oil
1 t soy sauce

1 tablespoon vegetable oil
1 teaspoon Garlic, chopped
1 shallot, sliced thin
1/2 lb snow peas
1 red pepper, cut into 1 inch squares

Directions

Marinate shrimp for 30 minutes.  Whisk together sauce ingredients in a second bowl.  Set aside.

Heat oil in 12 inch non-stick skillet until almost smoking. Stir fry peppers vegetables for 90 seconds and then add snow peas.  Continue stir frying for another minute or until the snow peas are crisp-tender.. Remove vegetables from pan heat 1 tablespoon oil in pan add garlic slices and shallots. Set heat to medium-low. Add shrimp to pan. Flip to brown on both sides, briefly.

Whisk sauce and add to Shrimp. Turn heat up for one minute to thicken sauce. Add veggies stir to coat.

Serve over rice
