Pesto!

Blender Pesto

Here’s a quick and easy recipe for basil pesto to use some of that basil that’s coming up in the herb garden by now.  Hmm…  Maybe I live further south than you do, but I’ve got basil!  Put all these ingredients in your blender and give it a couple of pulses:

2 c fresh basil
1 tsp salt
1/2 tsp pepper
2 cloves Garlic, chopped
2 tbsp pine nuts
1 c olive oil
1/2 c Parmesan

This is delicious on toast points, served over fresh pasta or slathered over steaks.  You might also try using this as a marinade.  Put 1/2 cup of pesto in a gallon size zip top bag, add your steak, and then massage the pesto into the steak through the bag.  Let this sit for an hour.  The steak will have a chance to come to room temperature and will cook better too.  Just before grilling, wipe off the pesto with some paper towels.  You can fill small ice cube trays with any leftovers and freeze into single use servings to keep in the freezer for instant use!
